fourth consecutive "SUPERIOR" rating from
A.I.B. 
Avon, Indiana- For
the fifth consecutive year, Harlan Bakeries, Inc. has
been audited by the American Institute of Baking (A.I.B.).
For the fourth consecutive year, Harlan Bakeries received
a "SUPERIOR" rating; the highest possible
rating and was presented with a Certificate of Achievement
by the A.I.B.
The facility and staff of Harlan Bakeries,
Inc., underwent their fifth annual American Institute
of Baking (A.I.B.) inspection on August 7th and 8th.
The inspection takes place annually and is based on
the A.I.B. Consolidated Standards for Food Safety. The
A.I.B. Consolidated Standards for Food Safety was published
for food processors' usage to evaluate the food safety
risks and compliance levels to the criteria in the Standards.
These Standards contain the criteria and rating method
used to assign a numerical score (rating) to the plant.
This criteria is a combination of good management principles;
The Federal Food Drug and Cosmetic Act; Good Manufacturing
Practices; U.S. Military Sanitary Standards; and the
Federal Insecticide, Fungicide, and Rodenticide Act.
The facility being inspected then receives a total score.
Harlan Bakeries, Inc., established
in 1991, produces Harlan Bigger Better Bagel® and
Harlan Giant Gourmet Bagel® brands, private-label
bagels, par baked bagels, pre-proofed frozen raw dough,
frozen dough bagels and mini bagels. The 160,000+ square
foot facility houses multiple production lines including
a recently completed new frozen warehouse expansion
of over 20,000 square feet.
